The BIP 72 E intermediate proofer was specifically designed for automated dough fermentation between rounding and dividing. Precise control manages the introduction of dough pieces into the trays. Subsequently, the dough pieces pass row by row through the tipping stations, according to the set fermentation time. The intermediate proofer operates in timed or continuous mode.
