The machine is used for chopping, emulsifying, mixing, and grinding meat under vacuum conditions. The vacuum technology allows for deep foaming and emulsification of the filling without air bubbles, which results in a perfect structure, better binding of water and fat, extended shelf life, and optimal color in cooked, raw, pâté-style, and frankfurter-style sausages.
